I Can't Speak Spanish but I Can Make Tortillas

That's right, I can now make homemade flour tortillas and they taste amazing!

So where did I get my recipe? My Mexican mother? No. One of my Mexican grandmothers? Nope. A white lady from Oklahoma? Yup! I used this recipe from the Pioneer Woman herself.


I was pleasantly surprised with how easy it really was and how delicious they taste. I think they are better than the ones I buy from the tortilla ladies at Kroger which is saying a lot because I think those are pretty authentic. So long Kroger ladies, Mitz is now making her own tortillas!

I also made some chocolate chip cookie dough cupcakes this weekend that were AMAZING as well. I was doing a test run for the Cupcakes, Champagne and Panty Exchange party that the girls and I are having in a couple of weeks.



I didn't have a piping bag to make the frosting look nice, so while they don't look beautiful, they tasted totally yummy. I was pretty proud of myself since A) I don't really like to bake or cook and B) this is the first thing I have baked successfully in this house. I blame B on our gas oven that Danny just had to have. We recently realized that when it said it was preheated it really wasn't so my baked good just never turned out right.

For a girl who doesn't like to cook I sure did try a lot of new recipes this weekend. I am not turning over a new leaf or anything, I will leave the cooking to the real cook in this house, but my in-laws came over this weekend to help with the bathroom makeover and I didn't want to look like a worthless wife just sitting on the couch, so I kept myself busy in the kitchen instead. I don't really like to participate in home renovation projects until we are at the stage where I can paint and decorate so I do whatever I can to look busy so I am not expected to help. So far, this technique has totally worked for me.

The Great Bathroom Makeover - Week 3

I am back with a bathroom makeover update!

I went ahead and skipped a week 2 update because that week was spent waiting on the plumber and electrician to finish doing their stuff. I seriously think the electrician took naps in our attic everyday for a week. It took him forever to finish!

Anyway, I came back from my trip on Sunday night and was so happy to see that Danny had gotten the ceiling and the majority of the walls up while I was away.

We are currently working on mudding and taping the drywall and then it will be time to texture and paint!

I am really hoping to have the painting done by Friday so Danny can lay the new floors this weekend.

Slowly but surely the project is coming together and we are still on track to be finished by the end of January or first week in February. I can't wait to have my bathroom back!

My Granddaddy

This is my granddaddy.
I know I shouldn't have favorites, but I do, it’s him. Growing up he used let us sit on his lap in the recliner and he would give us sips of his beer, take us camping in his RV, take us “fishing” in the swimming pool, and when none of our moms would come outside to watch us swim (an adult always had to be watching us) he would come outside and watch us for as long as we wanted to swim. He is always happy to see us when we walk into the door and is so proud of his grand kids (especially his Aggie grand kids).

This past weekend I was super proud of him. I flew to my grandparent’s home town because the high school gym was being named after my grandpa!!! How amazing is that?!?!?! My grandpa spent his whole career as an educator in Kingsville, Texas. He started off as a teacher and coach, then became an assistant principal, principal and at the end of his career the personnel director.

Unfortunately, my grandpa fell down at his house a few hours before his big ceremony and broke his hip so he couldn't make it. After we found out the diagnosis and got him settled in at the hospital for the night, my grandma and brother stayed with him and the rest of the family went to the ceremony.

I was so devastated that my grandpa couldn't be at the ceremony to see all the people that were there to support him. Instead, my mom and my aunts stood there in his place. It was definitely a bitter sweet night for us. We were all so happy and proud but we were missing the guest of honor. He would have loved seeing the old coaches he used to work with, his old players and friends and family from near and far.


This was definitely not how I expected my weekend to turn out, but I am so glad I was there to celebrate this awesome occasion.

The Great Bathroom Makeover - Week 1

A week ago Danny started on our master bathroom makeover. We have hated our master bath since we moved into this house almost a year ago but it was totally functional so we decided to live with it until we had all the money saved to do a complete renovation.

The master bath was a horrible blue color with yellow accent tiles. It was also the only bathroom accessible from the hall way so it is the bathroom that would get used when people came over to hang out (the other bathroom is a jack and jill between 2 of the guest rooms). It also had a really bad layout with an extra little vanity area as you walked towards our bedroom whose door would hit the door to Danny's closet and was really just wasted space for us.

We decided to turn our current master bathroom into two bathrooms. There will be a half bath off the hallway and then the master bath that is accessible through our bedroom.

I am so impressed by all the progress Danny has been able to make in the past week with the help of his dad and our friend Jon. It may still look like a mess to most people but once the plumber and electrician come tomorrow it should all start coming together since we will be able to get the sheet rock up and the floors laid! Then we will be in the home stretch of painting, putting in fixtures, molding and baseboards and then all the decorative touches!
I have really high hopes that the bathroom will be completely done in the next few weeks!
